Beer & Lime Marinated Salmon
NOTE: This is the best recipe for salmon EVER!!!

 

Beer & Lime Marinated Salmon

 1 lb.         fresh salmon fillets with the bone and skin removed   500 g
 1/4 c.        fresh lime juice              60 mL
 1/3 c.        beer                          75 mL
 3 Tbsp.     soy sauce                     45 mL
 1/2 Tbsp. minced fresh ginger root       8 mL
 2             garlic cloves, minced          2
 1 Tbsp.     minced onion                  15 mL
 2 Tbsp.     each finely diced red, green & yellow bell peppers 30 mL
 2 Tbsp.     lime zest (2-3 limes)         30 mL
                 Freshly ground black pepper


Combine all ingredients except salmon, bell peppers, lime and pepper; mix well. Wipe salmon pieces; place in a shallow glass or ceramic dish; pour marinade over top; turn salmon pieces several times to fully coat all sides; cover; refrigerate overnight.

Preheat oven, broiler or barbecue. Remove salmon from marinade. Broil, grill, bake or barbecue until fish flakes in centre (about 10 minutes per 1"/2.5 cm thickness).  We find that if you put the barbecue on it's lowest setting and grill the fish for 10 minutes on each side (basting frequently with the marinade), it comes out perfectly.

Serve with finely diced bell peppers, lime zest and pepper on top.
